Mexican or Hawaiian Cake

Pineapple, pecans and cinnamon give this cake a distinctive flavor. Top with Cool Whip or creamed cheese frosting.
Ingredients
- 2 cups flour
- 2 cups sugar
- 2 eggs
- 2 tsp baking soda
- 2 tsp cinnamon
- 1/2 chopped pecans
- 1 can crushed pineapple (undrained)
- Cream cheese frosting recipe:
- 1 8 oz pkg cream cheese
- 1 stick butter
- 2 cups powdered sugar
- 1 tsp vanilla

Method
Mix all ingredients into a large bowl. Mix with a fork until all ingredients are blended. Pour into a 9 x 11 cake pan. YOU DO NOT NEED TO FLOUR OR GREASE THE PAN. Just pour the batter straight into the pan. Bake at 350 degrees for 30-35 minutes until toothpick comes out clean. Top with cream cheese icing or Cool Whip. For cream cheese frosting: Blend all ingredients together until smooth. Top cake and sprinkle with pecans.
Notes: No oil or shortening is needed for this recipe.
