Mary's Sweet Potato Pie

Mashed sweet potatoes are mixed with eggs, evaporated milk, butter, sugar and plenty of spice, and then baked in two, 8-inch pie shells.
 

Ingredients

  • 3 medium sweet potatoes
  • 2 eggs
  • 1/4 to 1/2 cup evaporated milk
  • 1/2 stick (1/4 cup) butter
  • 4 tbsp cinnamon
  • 2 tbsp nutmeg
  • 1 to 1 1/2 cup sugar
  • 2 8-inch pie shells lined with pastry dough

Method

Buy or make your pastry dough. Boil sweet potatoes in a large pot of water until very tender. Once tender and still hot, peel sweet potatoes and place in an 18-qt bowl. Add butter and mix together with mixer on low. Then add sugar, eggs, cinnamon and nutmeg. Add milk gradually making sure you have a medium consistency of filling. Pour mixture into dough lined pie shells and bake at 325-375 degrees, for approximately 30-45 minutes. Watch pie carefully noticing it baking from outside to center. When toothpick comes out clean, pie is done. Will yield approximately 8 servings per pie and will make 2 pies.

 

Notes: Top slices of pie with Cool Whip or ice cream.
