Maple Apple Upside Down Cake


Apples and maple syrup on the bottom with creamy apple cake on top--served with fresh whip cream.



Ingredients:

  • 4 Tablespoons cup butter (melted)
  • 1/2 cup maple syrup
  • 2 medium braeburn, gala, or fuji apples (cored, pealed and sliced)
  • 1 1/2 cups flour (sifted is best)
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup shortening
  • 3/4 cup sugar
  • 2 eggs (separated)
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1/2 cup grated apple (same types listed above)

Method

Preheat oven to 350 degrees F. Pour melted butter then maple syrup into an 8 x 8 pan. Place sliced apples on top of butter and syrup mixture. In a separate bowl mix flour, baking powder and salt. In another bowl cream shortening, 1/2 cup of the sugar, egg yolks, and vanilla. Add dry mixture, milk and grated apple. Beat egg whites until stiff but not dry. Add remaining sugar to stiff egg whites and blend well. Fold egg white mixture into prepared batter. Cover apple and syrup mixture with batter and bake for 30-40 minutes. Serve with whipped cream.

Notes: This is a wonderful, flavor filled cake that is sure to please young and old alike.
