Maple Spice Semolina Cake

A light, moist cake flavored with cinnamon, nutmeg, cardamon and maple sugar--serve with whipped cream and orange zest.
 

Ingredients

  • Cake:
  • 2 cups semolina flour
  • 1 stick butter, softened
  • 1/2 cup light brown sugar
  • 2 eggs
  • 1 cup plain yogurt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 1/2 cups pure maple syrup
  • Topping:
  • 1 cup heavy whipping cream
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1/4 tsp cardamom
  • 3 teaspoons sugar

Method

Preheat oven to 350 degrees. With an electric mixer, cream butter and brown sugar until fluffy. Add eggs and mix until incorporated. Add yogurt, semolina, baking soda and baking powder then mix into a thick batter, 10-15 seconds. Spread batter into a buttered 9 x 13 pan and bake 30 minutes. While cake is baking, whip cream, sugar and spices for topping. Keep cream refrigerated until ready to use. When cake is done, and still hot, pour maple syrup over cake and cut into 12 squares or 24 triangles. When syrup is absorbed, serve cake with a spoon of spiced whipped cream and some orange zest to garnish.

 

Notes: An easy and festive dessert. Takes about 45 minutes to make including baking time.
