Mandarin Orange Cake

A yellow cake mix is baked with mandarine oranges in the batter, then spread with a vanilla pudding mixture containing pineapple and Cool Whip.
 

Ingredients

  • 1 box yellow cake mix
  • 4 eggs
  • 1/2 C salad oil
  • 1 regular can mandarin oranges and juice
  • Topping:
  • 1 15 or 20 oz. can crushed pineapple and juice
  • 1 Large pkg. vanilla instant pudding 1 8-oz carton frozen whipped topping, thawed

Method

Mix all cake ingredients with mixer; bake in 9 x 13 pan in 350 degree oven for 30 - 35 minutes. Topping: Stir pineapple and dry pudding. Fold in whipped topping and spread on cooled cake. Will keep for several days in refrigerator or freezer.
