Lite Pumpkin Pie


This pumpkin pie is lightly spiced and perfect for any holiday occasion.



Ingredients:

  • 1-9" unbaked pie shell( deep dish)or 2 8" shells
  • 3 eggs separated
  • 1-15 oz. can (2c.)pumpkin
  • 1 c evaporated milk
  • 1 c br. sugar
  • 1 tsp. gr. cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp gr. nutmeg
  • 1/4 tsp. gr. cloves
  • 1/4 tsp salt

Method

Make Crust. Preheat oven to 375 degrees. Whip egg whites till soft peaks form. In large bowl using mixer beat egg yolks, pumpkin, & remaining ingredients until well blended. Using wire whisk gently fold the egg whites into pumpkin mixture. Pour mixture into pie crust & bake on middle rack for 45 min. until knife clean inserted 1" from edge.
