Lemon-Peppermint Pie


A combination of sweetened condensed milk, lemonade concentrate, mint extract & whipped topping becomes the thickened filling for this no-bake pie.



Ingredients:

  • 1 can (Eagle brand) sweetened condensed milk
  • Juice of 1/2 lemon (about 4 tsp)
  • 1 (6 oz) can frozen lemonade concentrate, thawed (3/4 cup)
  • 2 teaspoons peppermint extract (or to taste)
  • 1 (8 oz) Cool Whip frozen whipped topping, thawed
  • 1 ready-baked crust

Method

Stir first 4 ingredients together and fold in Cool Whip. Pour into pie crust. Chill at least 2 hours.
