
This thickened, pudding-like mixture contains butter, sugar, lemon juice and eggs. It's cooked and served as a spread for breads, a filling for pastries, or as an accompaniment for plain cakes.
Cut butter in pieces and put in double boiler over hot water. Add sugar, lemon juice and zest. Stir over medium heat until the butter melts and the mixture is well-blended. Stirring constantly, pour a little of the hot mixture into the beaten eggs. Then return all the egg mixture to the pan over hot water. Stir until the mixture thickens enough to coat the back of a wooden spoon, about 10-12 minutes. Strain. Cover surface with plastic wrap. Cool; pour into jar and chill.
