Lemon Picnic Cake

Start with a cake mix, then add dissolved lemon or lime Jell-O and lemon extract to the batter. A lemon glaze is poured over the baked cake.
 

Ingredients

  • Cake:
  • 1 small package lemon or lime gelatin
  • 1 cup boiling water
  • 1 box yellow cake mix (2-layer size)
  • 3/4 cup oil
  • 4 eggs
  • 1 teaspoon lemon extract
  • Frosting:
  • 2 cups powdered sugar
  • 1/4 cup lemon juice

Method

Mix lemon or lime gelatin with water and set aside to cool. Mix together yellow cake mix and oil. Add eggs, one at a time, while mixing on medium speed. Add lemon extract and cooled gelatin. Pour into a greased and floured 9 X 13" pan. Bake about 30-40 minutes or until tests done, at 350 degrees. Poke holes all over cake immediately after removing from oven. Let cool for 10 minutes; meanwhile stir together powdered sugar and lemon juice, then drizzle entire top of cake slowly with glaze.

 

Notes: You may use a chopstick to poke the holes, about an inch apart. This allows glaze to seep into cake and makes it even more moist. The glaze should be the consistency of maple syrup and will harden as it cools. You can make it more tart or sweeter with more lemon or sugar.
