Lemon Delight

A sweet cream cheese layer and a lemon pudding layer sit atop a nutty shortbread crust in this springtime dessert. It's all topped off with whipped dessert topping.
Ingredients
- 2 cups flour
- 2 sticks margarine, softened
- 1 cup chopped walnuts
- 1/4 cup milk
- 2 8-ounce packages cream cheese, softened
- 2 cups powdered sugar
- 2 packages lemon instant pudding
- 3 cups milk
- Cool whip

Method
For crust, mix flour, margarine, and nuts. Pat into a 9x13-inch baking dish. Bake in a 350 degree oven for 20 minutes. Cool. In a bowl beat together the 1/4 cup milk, cream cheese, and powdered sugar. Spread over crust. In another bowl mix pudding and the 3 cups milk; spread over cream cheese mixture. Top with cool whip. Cover and chill for several hours.
