Lemon Chess Pie

This refreshing lemon pie is the perfect treat for summer!

Lemon Filling:
4 Large Eggs, separated
¾ cup Granulated Sugar
½ cup Lemon Juice
⅛ tsp Salt
¼ cup Melted Butter
1 tsp Vanilla Extract
Shortbread Crust:
2 cups Flour
1 cup Cold Unsalted Butter, cubed
½ cup Granulated Sugar
¼ tsp Salt


Adjust oven rack to middle position and heat to 350 degrees. Bake the pie crust for about 6 minutes, then let cool. See pie crust method below. Beat egg whites at high speed until bubbly and set aside. Whisk together the egg yolks, sugar and melted butter until combined. Add vanilla extract and lemon juice. Fold in egg whites. Pour into cooled pie crust and center in the middle rack of oven. Bake for 10-15 minutes, or until the crust is golden brown, and the edges no longer jiggle.


Add all ingredients except the butter. Rub the cubed butter in by hand until forming a coarse meal. Press into buttered pan.
