Lavender Apples Creme Brulee

A touch of lavender starts this recipe off nicely. The Greek yogurt that tops the apples brings the dish together and the sweet brown sugar topping is perfect.
 

Ingredients

  • 2 cups sliced and peeled Golden Delicious apples
  • 2 tablespoons butter
  • 2 tablespoons light brown sugar
  • 1 tsp dried and crushed culinary lavender
  • 1 cup Mediterranean style yogurt cheese or thick Greek yogurt
  • 4 tablespoons packed dark brown sugar

Method

Melt butter and 2 tablespoons light brown sugar in saute or frying pan over medium heat. Add crushed dried culinary lavender and stir. Add 2 cups sliced Golden Delicious apples and saute apples in brown sugar mixture until apples just start to become soft, about 2 to 3 minutes. Place one fourth of the apple mixture into each of the four ovenproof ramekins. Cover the tops of the apples in ramekins with the Mediterranean style yogurt cheese using about a fourth of the yogurt for each ramekin. Spread yogurt. Apple slices should be covered. Sprinkle 1 tablespoon dark brown sugar on the top of yogurt in each ramekin. Place ramekins on a baking sheet. Preheat oven broiler. Place ramekins on baking sheet under oven broiler and broil for 3 to 4 minutes until brown sugar on top is bubbling caramelized. Serve immediately.
