Key Lime Mousse Pie
This recipe isn't made in a pie plate but in a rectangular dish. The acid from the key lime juice helps the sweetened condensed milk to thicken. It has 2 pints of whipping cream folded into the key lime mixture. Available in bottles in larger grocery stores, key lime juice is not the same as regular lime juice.
Ingredients
- 1 cup crushed graham crackers
- 1 stick butter
- 2 pints whipping cream (4 cups)
- 4 cans fat-free sweetened condensed milk
- 1-1/2 cups key lime juice
- grated zest of 1 lime

Method
Melt butter & mix thoroughly with crumbs. Press in bottom of a 9x13-inch dish. Combine sweetened condensed milk and key lime juice, mixing with beater. Whip the cream and fold in the condensed milk-lime juice mixture & the lime zest. Spread atop the graham crumbs. Chill at least 6 hours or overnight.
