Key Lime Cupcakes with Lime  Frosting

Key lime yogurt, fresh lime zest and a bit of food coloring are the key to these moist, citrus flavored treats.

1× 18.25 oz box Yellow Cake Mix
4 Eggs
½ cup Water
½ cup Vegetable Oil
13.9 oz box Instant Vanilla Pudding Mix
1× 6 oz Container Key Lime Pie Yogurt
2 Tbsp Lime Zest
Green Decorating Paste or Food Coloring
3 sticks Butter, at room temperature
1 lb Confectioners Sugar
1 tsp Vanilla Extract
½ tsp Lime Juice
Zest of 1/2 Lime


Preheat oven to 350 degrees. Line 24 cupcake tins with paper liners. In a large mixing bowl, add the cake mix, eggs, water, oil, pudding, yogurt and lime zest. Beat on medium speed for 2 minutes. Add small amounts of the green coloring to produce a light green color, starting with two drops at a time. Fill cupcake papers 2/3 full with batter. Bake for 17-19 minutes or until a toothpick inserted into the center comes out clean. Remove from the pans and cool completely on a cooling rack. In a large mixing bowl, beat the butter until creamy. Add confectioners sugar, vanilla and lime juice, then mix on low speed until well combined. Increase speed on mixer to medium, and beat until light and fluffy, 1-2 minutes. Frost cupcakes with offset spatula or using a pastry bag and sprinkle lime zest on the tops.

Helpful Tips:

These are light, and seem so refreshing in the summertime. I also use green colored paper liners.
