Kahana Royale Mousse

This fluffy, chocolate- and macadamia nut-flavored dessert will delight your dinner guests. But because it contains uncooked egg whites, be sure to keep it well-chilled.
 

Ingredients

  • 6 oz. semi-sweet chocolate
  • 1/2 cup butter
  • 4 eggs, separated
  • 3/4 cup sugar
  • 1/4 cup macadamia nut liqueur
  • 1 cup heavy cream
 
Method

Melt chocolate and butter in a double boiler. Beat egg yolks and 1/2 cup of the sugar about 5 minutes; add to melted chocolate mixture, stirring constantly. Stir in liqueur. Let chocolate mixture cool. Whip cream until stiff; gently fold into the chocolate mixture. Beat egg whites with the remaining 1/4 cup sugar; fold into chocolate mixture. Chill well.
