Jo Jo's Cheesecake

A traditional cheese cake, but much easier to serve when prepared in a 9 X 11 pan--delicious topped with cherry pie filling.
Ingredients
- 2 8 oz pkgs cream cheese
- 1 egg
- 1 cup sugar
- 1 tsp vanilla
- 16 crushed graham crackers
- 2 tbsp melted butter
- 1 pint sour cream
- 1/2 cup sugar
- 1 tsp vanilla
- 1 can cherry pie filling

Method
Mix room temperature cream cheese, sugar, egg, and vanilla until creamy. Spray a 9 x 11 pan. Mix graham crackers and butter together and press into pan. Pour cream cheese mixture over graham cracker crust and bake at 350 degrees for 25 minutes. While baking, mix sour cream, sugar and vanilla together. Remove cream cheese mixture from oven and let stand for 15 minutes; turn the oven to 425 degrees. Pour sour cream mixture over cooled cream cheese cake and bake for 10 minutes. Remove and let cool. Store cheesecake in refrigerator until ready to serve. Pour cherries over chilled cheese cake and serve.
