|1 lbs||Dried Strawberries, soaked in water for fifteen minutes|
|½ lbs||Almond Meal|
|Honey, to taste, optional|
|½ lbs||Coconut Milk|
|½ cup||Coconut Flake|
Blend soaked strawberries in a food processor until they form thick a sauce. Add almond meal and honey to sauce and pour it into a pie mold. Let it dry in sun for a few hours. Combine all filling ingredients in a food processor and pour it into pie mold with crust. Place it in freezer until set. Sprinkle with coconut flakes and decorate with mint leaves before serving.
This happens to be a raw vegan, sugar free recipe and I find the pie to be amazingly satisfying. Check Wikipedia or Google for information on jackfruit.
