Honey Frozen Yogurt with Rosemary Nuts
Homemade frozen yogurt is prepared with honey and perfectly seasoned and prepared nuts to make for a tasty dessert that is light and refreshing.
Ingredients
- 1 cup heavy cream
- 1 cup whole milk
- 3/4 cup honey
- Pinch salt
- 1 cup plain whole milk yogurt
- 1/4 cup unsalted butter
- 2 tablespoons finely chopped rosemary
- 1/2 teaspoon black pepper
- 3 tablespoons brown sugar
- 1 tablespoon granulated sugar
- 2 teaspoons salt
- 1 pound mixed nuts like almonds, cashews, pecans and Brazil nuts, toasted and coarsely chopped

Method
In a medium saucepan, over medium low heat, combine cream, milk, honey and salt, whisking to fully dissolve honey. Do not boil. Remove from heat, pour into a heatproof bowl, and let cool five minutes. Whisk in yogurt until completely smooth, then cool completely. Cover and chill in refrigerator at least two hours, or ideally overnight, to let flavors develop. In a large saute pan, over medium low heat, melt butter, then add rosemary, pepper, sugars and salt. Cook one minute, stirring to combine ingredients. Add nuts and cook, stirring constantly, until nuts are thoroughly coated and fragrant, about three minutes. Spread onto a silicone sheet, or a piece of parchment paper, and let cool, then coarsely chop. Prepare frozen yogurt in an ice cream maker, according to manufacturer's instructions. Fold in desired amounts, reserving any extras for another use. Serve immediately, or freeze for up to two days.
