Homemade Peach Ice Cream

Crushed peaches are added to the milk and cream mixture, along with sugar and eggs, before freezing in an ice cream maker.
 

Ingredients

  • 6 Eggs
  • Pinch salt
  • 2 Cups Sugar
  • 1 TBSP Flour
  • 1 Pint Milk
  • 1 1/2 Quarts Milk, Scalded
  • 2 Cups Fresh Peaches, Crushed
  • 1/2 Pint Heavy whipping Cream

Method

Combine Eggs and Salt. Beat well. Combine and beat in flour and sugar. Slowly add the pint of cold milk, stirring well. Meanwhile, scald the 1 1/2 quarts of Milk. When this is hot, but not boiling, gradually stir in the first mixture of eggs and milk. Cook, stirring constantly, until the mixture coats a metal spoon. It will not be very thick but will thicken a little as it cooks. When cool, stir in fresh peaches and heavy whipping cream. Freeze in crank or electric freezer. If peaches aren't very sweet, you may add more sugar.
