Holiday Angel Pudding

This delicious pudding dessert has a layer of homemade walnut and date cake crumbled and topped with marshmallow and homemade whipped cream.
 

Ingredients

  • 1 cup sugar
  • 4 heaping tbsp flour
  • 1 tsp baking powder
  • 2 eggs
  • 1 cup walnuts or pecans
  • 1 cup chopped whole dates
  • 1 pint heavy whipping cream
  • 4 cups mini marshmallows

Method

Mix first 6 ingredients until moistened then pour into an 8 X 8 pan sprayed with vegetable oil. Bake at 350 degrees F. for 15-20 minutes, until golden brown. Cool then crumble cake into a large serving bowl and add marshmallows. Whip cold cream until smooth and creamy. Pour over mixture and serve.

 

Notes: Best when whole dates are chopped instead of pre-chopped. Refrigerate leftovers.
