Chickpeas are the base for these cupcakes which makes them healthy and hearty. The homemade peanut butter frosting brings these together perfectly.

1× 15 oz can Chickpeas, drained
⅔ cup Orange Juice
4 Eggs
⅔ cup Agave Nectar
⅔ cup Cocoa
½ tsp Baking Powder
¼ tsp Baking Soda
1 tsp Vanilla Extract
1 cup All Natural Peanut Butter
½ cup All Purpose Flour
½ cup Honey


Preheat oven to 350 degrees. Line a cupcake tin with liners. Blend chickpeas and orange juice in a food processor until smooth. Add eggs, one at a time, blending well in between. Combine agave, cocoa, baking powder, baking soda, and vanilla in a large bowl, then mix in chickpea mixture. Fill each cupcake liner about 3/4 full with batter and bake 15-18 minutes, until a toothpick inserted in middle comes out clean. For the frosting,

place the peanut butter and flour in a large bowl. Bring honey to boil in a small saucepan. Pour honey over peanut butter and flour and mix until thoroughly combined. If frosting is too thick, add a little milk to reach desired consistency.
