Grilled Peach Melba with Fresh Raspberry Sauce

Grilled fresh peaches are served with vanilla ice cream and topped with a fresh raspberry sauce that is made from scratch in this tasty summer dessert.
Ingredients
- 1/4 cup water
- 1/4 cup sugar, divided
- 2 tablespoons balsamic vinegar
- 2 cups lightly crushed fresh raspberries
- 2 tablespoons vegetable oil
- 2 peaches, halved and pitted
- 1 tablespoon butter, melted
- 2 cups vanilla ice cream

Method
In a small saucepan over medium heat, bring water, 3 tablespoons sugar and vinegar to a boil. Stir to dissolve the sugar then remove from heat and stir in raspberries. Refrigerate until ready to serve. Heat grill to medium heat and brush grill grates with vegetable oil. Brush cut side of peaches with melted butter and sprinkle with remaining sugar. Place peaches on grill with cut sides up and cook 4-5 minutes. Turn and grill for another 3-4 minutes. Peaches should be softened but still maintain their shape. Place each peach half in a bowl, top with a scoop of vanilla ice cream and fresh raspberry sauce.
