Green Mountain Maple Walnut Cheesecake

Shortbread cookie crumbs make up the crust, topped with a mixture of cream cheese, maple syrup, sour cream, eggs and walnuts.
Ingredients
- 1 cup shortbread cookie crumbs
- 1 cup chopped walnuts, divided
- 3 Tablespoons melted butter
- 3 (8 oz) packages cream cheese, softened
- 1/2 cup sugar
- 1 cup real maple syrup, divided
- 1/2 cup sour cream
- 3 eggs

Heat oven 325 degrees. In food processor, combine cookie crumbs and 1/2 cup of the walnuts; pulse until walnuts are finely chopped. Add butter; pulse until mixture is crumbly. Press crumb mixture into bottom of 9-inch springform pan. Bake 10 minutes. Remove crust from oven. In large bowl, beat cream cheese with electric mixer until light. Add sugar, 1/2 cup of the maple syrup and sour cream; blend well. Add eggs, beat at low speed just until mixed. Pour filling into crust. Bake 60 minutes or until center is just set. Remove from oven and cool on wire rack for 1 hour before chilling at least 6 hours. Just before serving, toast remaining walnuts and warm remaining maple syrup. Remove pan sides. Drizzle cheesecake with maple syrup and sprinkle with toasted walnuts.
