Grasshopper Cheesecake

Topped with chocolate, this adult cheesecake will become a favorite at gatherings.
Ingredients
- 1 1/2 cups chocolate graham cracker crumbs
- 1 tablespoon granulated sugar
- 3 tablespoons melted butter
- 16 ounces cream cheese, room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1/4 cup creme de menthe
- 1 teaspoon vanilla extract
- 3 ounces of chocolate
- 1/4 cup dairy sour cream
- A few fresh mint leaves for garnish

Method
First pre-heat the oven to 350 degrees. Next mix cracker crumbs, melted butter and the 1 tablespoon sugar together. Press in a 9-inch spring-form pan, chill. Next cream the cream cheese and the 1 cup of sugar together. Then add in the eggs, one at a time. Next add the creme de menthe and the vanilla extract. Pour into chilled crust and bake for 40 to 50 minuets, or until a cake tester comes out clean. Refrigerate for six hours or overnight. Melt chocolate. Add sour cream to chocolate and spread onto chilled cheesecake. Garnish with a few mint leaves in the center. And last, but not least EAT!!!
Notes: Personally I like to wait a day before eating the cheesecake.
