Grandma's Bread Pudding


Bread cubes, raisins and optional pecans are baked in a milk, egg, sugar and butter mixture flavored with vanilla, cinnamon and nutmeg, and served with a thickened fruit juice sauce.



Ingredients:

  • 6-8 cups white and/or whole wheat bread in large cubes  
  • 1 Cup raisins  
  • 1 Cup chopped pecans (optional)  
  • 3 eggs, beaten  
  • 4 Cup milk  
  • 2 Cups sugar  
  • 8 Tb. butter, melted  
  • 2 Tb. vanilla  
  • 1 Tb cinnamon
  • 1 Tb nutmeg  
  • Sauce:
  • 1/2 Cup butter  
  • 1 1/2 Cup powdered sugar  
  • 2 egg yolks  
  • 1/2 Cup desired fruit juice (such as orange or apple)

Method

Combine all dry ingredients in large bowl. Combine eggs and remaining ingredients. (Mixture should be very moist.) Pour into buttered 9 x 13" baking dish. Place into non-preheated oven. Bake at 350 for approx. 1 hour and 15 minutes, until top is golden brown. Serve warm with warm sauce. Sauce: Melt butter; stir in sugar over medium heat until combined. Remove from heat and blend in egg yolks. Pour in juice, stirring constantly. Cook until slightly thickened. Sauce will thicken a little more as it cools. Serve warm over warm bread pudding.
