Caramel corn makes a great holiday-time (or any-time) treat. Just coat popcorn with a cooked syrup and bake.

  • Servings: 20 servings

2 cups Packed Brown Sugar
1 cup Real Butter
½ cup Dark-colored Corn Syrup
½ tsp Salt
½ tsp Baking Soda
20 cups Popped Popcorn
Peanuts, optional

Preheat oven to 250 degrees.

On stove top, in a heavy duty saucepan, combine brown sugar, butter, syrup and salt. Over medium heat, bring to a boil, stirring to melt butter. Boil gently, uncovered, for exactly 5 minutes, then remove from heat and add soda. Stir well.

Pour mixture over popped corn in a large roasting pan (add nuts at this point if you want to); bake for 1 hour. Gently stir popcorn every 15 minutes. Allow to cool completely before storing in an airtight container.
