Grandma's Old Fashioned Caramel Corn

Caramel corn makes a great holiday-time (or any-time) treat. Just coat popcorn with a cooked syrup and bake.
 

Ingredients

  • 2 cups packed brown sugar
  • 1 cup real butter
  • 1/2 cup dark-colored corn Syrup
  • 1/2 tsp. Salt
  • 1/2 tsp. Baking soda
  • 20 cups popped popcorn
  • Peanuts (optional)

Method

Preheat oven to 250 degrees. On stove top, in a heavy duty saucepan, combine brown sugar, butter, syrup and salt. Over medium heat, bring to a boil, stirring to melt butter. Boil gently, uncovered, for exactly 5 minutes, then remove from heat and add soda. Stir well. Pour mixture over popped corn in a large roasting pan (add nuts at this point if you want to); bake for 1 hour. Gently stir popcorn every 15 minutes. Allow to cool completely before storing in an airtight container.

 

Notes: Freezes well, makes a great gift!
