Gram's Holiday Ricotta Pie

My Gram made some delicious treats. This pie has been made for many holiday gatherings.

¼ cup Butter
⅔ cup Sugar
3 cups Flour
1 tsp Baking Powder
2 Eggs
3 lbs Ricotta Cheese
1½ cups Sugar
5 Eggs, beaten
¼ tsp Cinnamon
1 tsp Lemon Zest
1 tsp Vanilla
Egg Wash
Additional Sugar & Cinnamon, if desired


Mix pastry dough and divide into quarters. Roll out 1 quarter dough to fit into 9" pie plate. Place in pie plate. Roll another 1 quarter and cut into 1" wide strips. Mix ingredients for filling and fill pie plate. Cover filling with the dough strips in a lattice weave or place decoratively across pie. Brush strips with egg wash (1 egg beaten with 1 tsp water) and sprinkle with sugar and cinnamon if desired. Repeat with remaining dough and filling to make a second pie. Bake in preheated 350 degree oven for for 1 1/4 hours or until filling is set. Cool on rack and then chill in refrigerator at least 2 hours.

Helpful Tips:

This pie is delicious served chilled with a little whipped cream.
