Apples and a sweet cream cheese frosting, rolled up in a moist cinnamon flavored cake.
Preheat oven to 350 degrees F.
Grease a jelly roll pan and line with parchment paper.
Grease and flour paper.
Lay towel, a little bigger than the jelly roll pan, on table and sprinkle with extra powdered sugar.
Combine the flour, baking powder, baking soda, cinnamon and salt in a small bowl.
Beat eggs and sugar in a large mixing bowl until thick.
Stir in mashed apples.
Stir in the flour mixture.
Spread evenly into prepared pan.
Bake for 13 to 15 minutes.
Immediately loosen and turn cake onto prepared towel.
Carefully peel off paper.
Roll up cake and towel together, starting with narrow end.
Cool on wire rack.
Beat cream cheese, powdered sugar, butter and vanilla in small mixing bowl until smooth.
Combine the remaining apples, cinnamon and sugar together.
Carefully unroll cake and remove towel.
Spread the apple mixture over the cake.
Then spread the cream cheese mixture over the apple mixture.
Reroll the cake.
Wrap in plastic wrap and refrigerate about 1 hour.
