Glazed Fruit Kabobs

Cubes of pineapple, mango, papaya, mandarin oranges and banana are threaded onto skewers, brushed with syrup, and grilled.
 

Ingredients

  • 1 fresh pineapple, peeled cut into large cubes
  • 1 fresh mango, peeled and cut into large cubes
  • 1 fresh papaya, peeled and cut into large cubes
  • 1 small can mandarin oranges, drained and juice reserved
  • 1 fresh banana, peeled and cut into large cubes
  • 1/4 cup water
  • 1/4 cup orange or apple juice
  • Juice from drained mandarin oranges
  • 1/2 cup granulated sugar
  • 6 long bamboo skewers

Method

Combine water, orange juice, mandarin orange juice, and sugar in saucepan. Heat gently, stirring until sugar is dissolved and liquid becomes slightly thickened. Set aside to cool. Soak skewers in water 30 minutes to prevent burning on grill. Thread fruit cubes onto skewers, alternating fruits. Heat grill and place skewers on aluminum foil. Brush with glaze. Turn skewers until fruit is lightly grilled. Goes great as a side dish with chicken, beef, or seafood, or for dessert.

 

Notes: Kabobs do better when placed on foil. The glaze will sometimes flare up flames from the grill.
