Gingered Fruit and Dumplings

Ginger flavors the dumplings as well as the sauce in this dessert. Pineapple, mandarin oranges, and raisins give the sauce a tropical twist.
 

Ingredients

  • Dumplings
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 2 Tbsp packed brown sugar
  • 1/2 tsp ground ginger
  • 3 Tbsp butter
  • 1 egg
  • 1/2 cup orange juice, divided
  • Fruit Sauce
  • 2 cans( 15 ounces each) mandarin orange segments, drained
  • 1/2 cup orange marmalade
  • 1 can ( 8 ounces) crushed pineapple with juice
  • 1 Tbsp lemon juice
  • 1/2 cup raisins
  • 1/4 cup minced crystallized ginger
  • 1/4 cup sliced almonds
  • garnish- mint sprigs

Method

Combine the flour, baking powder, brown sugar, and ground ginger in a medium bowl. Cut in the butter till the mixture is crumbly. Add the egg and 1/3 cup of the orange juice. Stir till evenly moistened. Set aside. In a blender container place the mandarin orange segments and marmalade plus the rest of the orange juice. Blend till smooth. Pour into a 12 inch skillet. Stir in the pineapple with juice, lemon juice and raisins. Bring to a boil, drop the dumpling batter by tablespoons into the bubbling sauce, making 8 dumplings in all. Cover the skillet, reduce the heat to simmer and cook 20 minutes. To serve spoon the dumplings into dessert dishes. Add the crystallized ginger and almonds to the sauce and spoon over and around the dumplings. Garnish and serve.

 

Notes: This is an easy and quick delicious dessert to prepare, yet impressive enough for company. If desired serve with frozen yogurt or ice cream.
