Fruitcake

A traditional holiday cake with pineapple, dates, raisins, cherries and pecans.
Ingredients
- 2 c. water
- 2 c. sugar
- 1 1/2 c. cut dates
- 1 1/2 c. raisins
- 5 Tbsp crisco
- 3 c. flour
- 2 tsp. soda
- 1 tsp salt
- 2 tsp cinnamon
- 1 tsp. cloves
- 3/4 c. chunk pineapple, drained
- 3/4 c. marachino cherries, drained
- 3/4 c. pecan pieces

Method
Put sugar, water, dates, raisins and crisco in dutch oven. Bring to a boil, simmer for 20 minutes. Cool completely. Add flour, soda, salt, cinnamon and cloves; mix by hand. Last, add pineapple chunks, cherries and nut. Pour into greased and floured large tube pan. Bake for 1 hour at 350 degrees, or until knife inserted comes our clean.
Notes: I found that cooking spray doesn't work as well as greasing and flouring the pan. I also found that it takes a little longer than an hour, depending on your oven. But it's really good.
