Fruit Kabob

Cubes of fruit are threaded onto skewers and grilled. The kabobs are brushed with a mixture of apricot jam and honey that's flavored with ginger, and sprinkled with sesame seeds.
 

Ingredients

  • 2 Bananas
  • 2 Apples
  • 5 Fresh Apricots
  • 1 Pineapple
  • 2 Mangos
  • 2 Cups Apricot Jam
  • 1/2 cup Honey
  • 1 TBSP Lemon juice
  • 1/4 TSP ground Ginger
  • 10 wooden skewers
  • 3 TBSP Sesame seeds - toasted

Method

Cut fruit into 2-inch pieces. Push fruit onto skewers, alternating fruit types. If the apples break, use a drill bit from the garage, clean it and twist a hole through the apple for the skewer to go through. Mix the jam, honey, lemon juice and ginger in a bowl. Place Fruit kabobs on the BBQ grill. Brush with Jam mixture. Cook until warm, turning occasionally. Place on platter and sprinkle with toasted Sesame seeds.

 

Notes: This sauce is great on Chicken and shrimp Kabobs too. Serve with rice. Try other fruits; most will work great!
