Fruit Coffeecake

Coffee cake with your choice of fruit filling that is covered with a crumbly crust. Try it at your next brunch.
 

Ingredients

  • Crust:
  • 1 stick margarine
  • 1 cup sugar
  • 2 cups flour
  • 2 tsp baking powder
  • 1 egg
  • milk to make 1 cup when added to egg
  • Filling:
  • 1 lb can fruit pie filling (cherry,apple,blueberry, peach, etc.
  • Topping:
  • 1 stick margarine
  • 1 cup flour
  • 1 cup sugar

Method

Crust: Cream 1 cup sugar and 1 stick margarine. Add 2 cups flour and baking powder. Put 1 egg in measuring cup and add enough milk to make 1 cup liquid. Add to creamed mixture. Spread in ungreased jelly roll pan (10" x 15"). Spread fruit filling over crust batter. Topping: Crumble 1 stick margarine, 1 cup sugar and 1 cup flour together. Sprinkle on top of fruit filling. Bake at 350 degrees for 45 minutes. Drizzle confectioners sugar glaze over top when cool, if desired.
