Frosty Fruit Compote

This simple, but elegant dessert, is a light and colorful finish for any meal.
 

Ingredients

  • 1 cup strawberries
  • 1 cup raspberries
  • 1 cup peaches
  • 1 cup blueberries
  • 1/4 cup sugar
  • 1 teaspoon orange zest
  • 1/8 teaspoon almond extract

Method

Place individual compote dishes in freezer to chill at least 10 minutes. Rinse all fruit. Stem and cut strawberries in half. Cut peaches into bite sized pieces. Place all fruit in a bowl. Place sugar, orange zest and almond extract into a jar, or container with a lid, then shake vigorously. Sugar will have the consistency of cornmeal. Sprinkle half of sugar on fruit. Mix gently with a spoon and refrigerate until ready to serve. To serve, divide fruit among chilled compote dishes. Sprinkle remaining sugar on top of each bowl. Serve immediately.

 

Notes: The fruit looks like frosted stained glass and tastes heavenly. Fresh fruit may be substituted with thawed frozen fruit for year round enjoyment.
