Fresh Strawberry Sauce

This cornstarch-thickened low fat dessert sauce, made with fresh strawberries and flavored with a little almond extract, may be served as an ice cream topping or a cake topping.
 

Ingredients

  • 1 cup sliced fresh strawberries
  • 1 tablespoon sugar
  • 3/4 teaspoon cornstarch
  • Several drops almond extract
  • Ice Cream or Angel Food Cake

Method

Combine the strawberries and sugar in a small bowl; cover and refrigerate about an hour. Drain, reserving syrup. Set berries aside. Add enough water to syrup to equal 1/2 cup; stir into cornstarch in a small saucepan. Cook and stir until thickened and bubbly; cook 1 minute more. Remove from heat; stir in extract. Pour over berries; fold gently. Cool, then cover and chill. Serve over ice cream or cake.

Number of Servings: Makes 3/4 cup.
