Sliced apples are cooked in a mixture that is flavored with Cafe Vienna coffee powder, then spooned into crepes, rolled and topped with ricotta cheese, Cool Whip, and additional Cafe Vienna powder.
1. Slice each apple quarter into 1/8-inch slices. Place in a heavy saucepan with lid. Add apple juice and 1 Tbsp of the coffee powder; bring to a simmer. Cover saucepan and cook over low heat until apples are tender, about 15 minutes. Remove lid and increase heat to high. Cook until some of the juice evaporates, about 2 minutes. Set aside until lukewarm.
2. Microwave crepes about 10 seconds each on high just till warm. Place each crepe on a separate plate. Spoon 1/4 of the cooked apples down one side of each crepe. Roll from the filled side to form a cigar shape.
3. Beat ricotta cheese with a hand mixer or fork about 1 minute to soften. Gently fold in the whipped topping, remaining coffee powder and the 1 teaspoon cinnamon. Spoon 1/4 of ricotta mixture over each crepe.
Notes:
You may use other fruit if you like.
