French Vanilla Apple Crepes

Sliced apples are cooked in a mixture that is flavored with Cafe Vienna coffee powder, then spooned into crepes, rolled and topped with ricotta cheese, Cool Whip, and additional Cafe Vienna powder.
 

Ingredients

  • 2 large apples, peeled, cored and quartered (golden delicious or gala)
  • 2 tbsp apple juice
  • 3 tbs powdered General Foods International Coffee Cafe Vienna (divided)
  • 4 dessert crepes (store-bought or homemade, as you prefer)
  • 1/2 cup ricotta cheese
  • 1/2 cup frozen whipped topping, thawed
  • 1 tsp cinammon

Method

1. Slice each apple quarter into 1/8-inch slices. Place in a heavy saucepan with lid. Add apple juice and 1 Tbsp of the coffee powder; bring to a simmer. Cover saucepan and cook over low heat until apples are tender, about 15 minutes. Remove lid and increase heat to high. Cook until some of the juice evaporates, about 2 minutes. Set aside until lukewarm. 2. Microwave crepes about 10 seconds each on high just till warm. Place each crepe on a separate plate. Spoon 1/4 of the cooked apples down one side of each crepe. Roll from the filled side to form a cigar shape. 3. Beat ricotta cheese with a hand mixer or fork about 1 minute to soften. Gently fold in the whipped topping, remaining coffee powder and the 1 teaspoon cinnamon. Spoon 1/4 of ricotta mixture over each crepe.

 

Notes: You may use other fruit if you like.
