Egg Nog Mallow Dessert


Parfaits of marshmallows, eggs, and whipped cream with a rum flavor to spice it up.



Ingredients:

  • 4 c. miniature marshmallows  
  • 1/4 c. whole milk  
  • 2 large eggs, beaten  
  • 1 T. rum flavoring  
  • 1 c. heavy cream, whipped              

Method

In a double boiler, melt marshmallows with milk; stir until smooth. Gradually add beaten eggs. Cook 2 to 3 minutes, stirring constantly. Remove from heat and stir in rum flavoring. Chill until slightly thickened; mix until well blended. Fold in whipped cream. Spoon into 6 to 8 serving dishes; chill several hours or overnight. If desired, garnish with additional whipped cream and toasted slivered almonds. Serves 6 to 8. Variations: Fold in chopped candied fruits. Layer with chopped maraschino cherries.
