Easy Chocolate Chip Macaroon Pie

This pie really is simple to prepare. There is plenty of sweetened coconut and it blends well with the dark chocolate.
 

Ingredients

  • 4 eggs, beaten
  • 1 12 oz pkg dark chocolate chips
  • 1 3/4 cups granulated sugar
  • 1 15 oz can cream of coconut
  • 6 tbsp stick butter, melted
  • 1 tbsp vanilla flavoring
  • 2 cups sweetened flaked coconut
  • 1 deep dish prepared pie crust
 
Method

Preheat oven to 350 degrees. Place pie crust in a glass pie pan. Use a tork to puncture holes in bottom and side to keep crust from rising up. Beat eggs in a large mixing bowl. Combine remaining ingredients in a large mixing bowl with eggs and stir until well blended. Pour mixture into pie pan and bake 40-50 minutes or until top is golden brown. Cool and serve warm with vanilla bean ice cream or whipped cream.

 

Notes: I place a pie crust shield over my pie to keep edges of crust from browning too much. After serving, keep remaining pie refrigerated.
