Easy Cheesecake

This no-bake cheesecake has lemon Jell-O to help it set, along with cream cheese, and whipping cream in a graham cracker crust.
Ingredients
- Crust:
- 15 whole graham cracker rectangles, crushed
- 1/4 pound butter or margarine
- 2 tablespoons powdered sugar
- Filling:
- 1 small package lemon jello
- 1 cup boiling water
- 1-8 ounce cream cheese
- 1/2 cup sugar
- 1/2 pint whipping cream
- 8 ounce can of pineapple, drained (optional)

Method
Filling: 1. Crush the graham crackers into a fine powder. 2. Melt the butter or margarine and add. 3. Mix the graham crackers, butter and powdered sugar well. In a 13x9 pan, press the mixture over the bottom and up the sides of the pan. Filling: 1. Mix the lemon Jell-O with the boiling water and let set till cool. 2. Whip the cream until soft peaks form and add the sugar. 3. Mix the cream cheese with the COOLED Jell-O; fold in whipped cream and drained pineapple. 4. Place in the 13x9 pan and refrigerate until set.
Notes: The pineapple is an optional item. You can use cherries, walnuts or anything to your liking to this pie and it will still turn out great. ENJOY!
