Dreams are Made of Pie

This pie combines reduced-fat cream cheese and lime yogurt, gelatin, whipped topping, crushed pineapple and cherries, in a graham crust.
Ingredients
- 1 envelope unflavored gelatin
- 1/2 cup cold water
- 1 (8 oz) container reduced-fat cream cheese
- 1 (8 oz) container low-fat or non-fat key lime yogurt
- 1/2 cup drained, crushed pineapple
- 1 (6 oz) bottle maraschino cherries, drained and chopped
- 1 container (8 oz) frozen non-fat whipped topping, thawed (divided use)
- 1 (9 in) reduced-fat purchased graham cracker crust
- 1 lime, sliced thinly

Method
Soften unflavored gelatin in 1/2 cup cold water; bring to boiling, stirring to dissolve, and put to side to cool. Stir together yogurt and cream cheese; gradually stir in cooled gelatin. Fold HALF of the tub of non-fat topping, the drained, crushed pineapple, and the chopped maraschino cherries into the yogurt-gelatin mixture. Chill until mixture mounds. Spoon the mixture into the graham cracker crust. Chill a few hours until firm, and then decorate with remaining whipped topping and sliced limes to serve.
Notes: Pie is best eaten very cold; any leftovers must be refrigerated.
