|2 sticks||(1 Cup) Butter, softened|
|1 cup||Confectioners Sugar|
|2– 2½ cup||All-purpose Flour|
|½ tsp||Vanilla Flavoring|
|½ cup||Very Finely Chopped Walnuts|
|Pudding Mix of Your Choice|
|Fresh Fruit &/or Whipped Cream|
|No-bake Cheesecake Mix|
Whip softened butter until smooth. Add confectioners sugar & continue to beat. Add vanilla flavoring & walnuts. Slowly add flour, about 1 C. at a time, until well blended. Using a melon scoop for consistency in size, for dough into 1 inch balls & drop into mini-muffin tins. Press center of each ball with thumb or finger to fill out to side of the muffin tin. Bake at 400 degrees for 8 - 10 minutes until bottoms are slightly brown. Allow to cool & then fill with pudding mix, or fresh fruit, or no-bake cheesecake filling.
Fun & easy dessert that can be made ahead of time. Can bake and freeze the mini-quich shells for later use.
