Deep-Dish Apple Pie

Three pounds of cooking apples are used in this deep-dish pie recipe. This apple pie is sweetened with sugar, flavored with cinnamon, ginger and nutmeg, and dotted with a little butter.
 

Ingredients

  • 3 pounds cooking apples (Baldwin or Granny Smith), peeled, cored, thickly sliced (about 8 cups)
  • 1 cup sugar
  • 2 Tbs. all-purpose flour
  • 1/2 tsp. ground cinnamon
  • 1/2 tsp. ground ginger
  • 1/8 tsp. ground nutmeg
  • Flaky Pastry (recipe elsewhere)
  • 1 Tbsp. butter, cut into bits

Method

Preheat oven to 375 degrees F. In large bowl, combine apples, sugar, flour and spices; toss to coat. Roll out one portion of pastry to a 14-inch round; use to line deep 9-in. pie plate. Fill with apple mixture. Dot with butter. Roll out remaining pastry to 12-in. round; with small cutters, cut out vent holes. Use pastry round to cover apple mixture. Seal and crimp edges. Place a sheet of foil on lower oven rack to catch drips. Place pie on middle rack; bake 60 to 70 minutes or until golden brown, covering edge with aluminum foil if pastry is browning too quickly. Cool completely on wire rack.
