Darn-Close-to-Perfect-Pastor's-Wife Pizza

This dessert pizza has a made-from-scratch cookie crust, a filling of cream cheese with white chocolate chips, and a topping of raspberry preserves.
 

Ingredients

  • Crust:
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 well-beaten egg
  • 2 cups all-purpose flour
  • 1 tbsp pure vanilla extract
  • Filling:
  • 12 oz white chocolate morsels
  • 8 oz cream cheese
  • 1/2 cup powdered sugar
  • 1/4 tsp salt
  • 1 tbsp pure vanilla extract
  • Topping:
  • 1 cup seedless red raspberry preserves
  • Glaze: 1 cup white chocolate morsels, melted

Method

Preheat oven to 350 degrees. In a large mixing bowl mix butter, sugar, egg and vanilla. Blend well, add flour, and mix well again. Press into a sprayed 12-inch round pizza pan and bake 15 minutes or until edges are lightly browned. Set aside to cool completely. In a saucepan, melt cream cheese and white chocolate morsels on low heat, stirring often until well blended and chips are melted. Remove from heat and stir in powdered sugar. Cool slightly and spread over cooled crust. Spread preserves on top, leaving a small border of cream cheese showing on the edge. Drizzle melted white chocolate over top. Chill 3-4 hours or overnight. This freezes well if covered.

 

Notes: I JUST HAD TO DEVELOP A TRIBUTE RECIPE FOR ONE OF MY BEST FRIENDS, OUR PASTOR'S WIFE, SINCE I DEVELOPED ONE FOR HER HUSBAND. THERE HAVE BEEN LITTLE JOKES ABOUT "PERFECTION" SINCE THESE RECIPES DEBUTED.
