A classic cheese cake with a graham cracker crust and a layer of sour cream topping.
Preheat oven to 350 degrees. Combine graham cracker crumbs, butter, and sugar and mix until blended. Pour crust into springform cake pan (about 9 inches in diameter). Press crust along bottom and sides and set aside. Then combine sugar, eggs, vanilla, and softened cream cheese in bowl. With an electric mixer, mix until smooth. Pour onto crust and bake for 20 to 25 minutes but no longer. The cake filling will not be firm. After it is done baking, set it aside to cool. Next, combine sour cream, sugar, and vanilla. Pour over cooled cheese cake and bake for 10 minutes at 350 degrees. Let it cool then refrigerate covered with wax paper until firm.
Notes:
Make sure you do not over cook cheese cake. The cheese cake will become firm in the refrigerator. Also make sure you let cheese cake cool before putting it in refrigerator.
