
This mixture of flour, water, butter and eggs is spooned in mounds onto a baking sheet and "puffs" as it bakes. A variety of fillings may be used; vanilla pudding is suggested for these.
Preheat oven to 400 degrees. Bring water and butter to a boil. Stir in flour all at once. Stir vigorously over low heat about 1 minute or till mixture forms a ball. Remove from heat. Cool slightly. Beat in eggs, one at a time; continue beating till smooth. Drop dough by scant 1/4 cupfuls, about 3-inches apart onto greased baking sheet. Bake about 35 minutes or until puffed and deep golden. Cool away from draft. Cut off tops. Pull out any soft dough. Fill with vanilla cream pudding. Replace tops; dust with powered sugar. Refrigerate till served.
