An easy, elegant dessert--puff pastry with marscapone cheese and a sweet cranberry compote.
Roll out puff pastry on floured board into 9 x 12 rectangle.
Fold 4 edges in 1 inch to create a border, brush with melted butter.
Bake on parchment covered sheet 15 minutes at 375 degrees F until golden. Remove and cool completely .
In small sauce pan cook cranberries, sugar and orange juice over medium high heat until syrupy, about 15 minutes.
Cool off heat.
To assemble pastry, brush with raspberry jam.
Whisk almond extract with marscapone cheese and spread over jam.
Spread cranberry mixture over cheese and chill 15 minutes.
Dust with powdered sugar.
Notes:
Can be made in advance and chilled in refrigerator one day before serving.
