Crab Apple Bread Pudding


The ultimate comfort food-bread pudding. This one you can make quickly with common ingredients in your pantry.



Ingredients:

  • 3-4 cups dried bread cubes
  • 4.6 oz JELL-O cook & serve vanilla pudding & pie filling
  • 2 eggs
  • 3 1/2 cups milk
  • 1/2 cup sugar
  • Cinnamon to taste (2-3 tsp)
  • 1/3 cup brown sugar for topping

Method

Heat oven to 350 degrees. Fill 8 inch ceramic pie pan with bread cubes. Sprinkle with cinnamon to taste. Beat 2 eggs and 1/2 cup sugar into 1 cup milk. Pour mixture over bread cubes and let soak for 2 to 3 minutes. Stir pudding mix into 2 1/2 cups milk and pour on top of bread also. Sprinkle top with cinnamon and brown sugar. Bake until firm and browned on top, about 45 minutes.

Notes: Cooking time will vary depending on dryness of bread used. Refrigerate any pudding not eaten warm. Serve warm with topping of any tart jam. I like to use my homemade crab apple jam.
