Cottage Pie (polish cheesecake)


An easy cheesecake that is made with cottage cheese.



Ingredients:

  • 1 10 inch frozen deep pie shell  
  • 1 24 oz carton cottage cheese  
  • 3 large eggs  
  • 1 cup sugar  
  • 1 Tbs. cornstarch  
  • 1 tsp. vanilla

Method

Preheat oven to 350. Put cottage cheese in blender. Blend in sugar, vanilla and cornstarch. Add eggs, 1 at a time. Pour into frozen 10 deep pie shell. Bake at 350 for 45-55 minutes. (Until knife comes out clean.)

Notes: Use rubber spatula to help start blending. Pie will set up completely when cooled.
