Cool Coconut-Lime Dessert Bars


These tasty treats are made by combining limes, pecans, cream cheese, Cool Whip, pudding, milk and shredded coconut.



Ingredients:

  • 1 1/2 cups flour
  • 1 1/2 sticks margarine (3/4 cup)
  • Zest of 2 limes
  • 1/2 cup finely chopped pecans
  • 8 oz cream cheese
  • 1 Tbsp fresh lime juice
  • 1 cup confectioners sugar
  • 1 8 oz. carton frozen Cool Whip, thawed
  • 2 (3 oz.) pkgs instant coconut cream pudding mix
  • 3 cups milk
  • 1/4 cup toasted shredded coconut

Method

Preheat oven to 350 degrees. Combine flour, margarine, pecans and HALF of the lime zest with a mixer, blending well. Press in bottom of ungreased 9x13 baking dish. Bake for 15 minutes. Let crust cool. Combine cream cheese, lime juice and confectioners sugar. Beat until smooth. Fold in HALF of the cool whip. Spread this over the cooled crust. Refrigerate. Using mixer combine pudding and milk at low speed just until it begins to thicken, about 2 minutes. Spread pudding over the cream cheese layer. Carefully spread remaining Cool Whip over the pudding. Sprinkle toasted coconut and remaining lime zest over the top. Refrigerate at least 4 hours before serving.

Notes: I am always trying to combine different flavors and these two seemed like a good spring taste. Very cool and light.
